Ever since Freya was diagnosed with multiple allergy, I feel the urge to bake safely for her. My first experimentation is this cookies. I am glad that it succeed. The only drawback, it feels too lemoney and overpowering the banana flavour, which I adore more.
But nevermind, this is good enuff for a start.
The other thing, she is also allergic to wheat a little bit. I still don't have the recipes for gluten free baking. I am ordering two gorgeous books (I hope) from Amazon. Can't wait to have it on my shelves.
Banana cookies
Resep:
170gr all purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
100gr icing sugar
80 gr mashed banana
2 tsp lemon zest
2 tsp squeezed lemon water
125 gr margarine unsalted
Cara:
1. Mix margarine, sugar, lemon zest and lemon water in medium speed until fluffy.
2. Add banana, mix in low speed
3. Add in flour, mix with wooden spoon.
4. Drop a spoonful at a time, bake in 180 Celcius for 20-25 minutes.
